Shrimp club sandwich

A fresh and delicate sandwich of spinach and lemon, shrimp and avocado, corn and mustard. Perfect for an aperitif and as a tasty snack.

Ingredients

Small meal For 4 people

8 slices of toast bread

2 tablespoons of mustard

1 avocado

4 tablespoons of corn kernels in a jar

1 tablespoon of lemon juice

herb salt

pepper

20 g of spinach for a salad

120 g of cooked tail-on shrimp

How to proceed

Preparation:

approx. 20 minutes

Toast the slices of bread and spread them with mustard. Halve the avocado and pit it. Remove the pulp from the peel and mash it with a fork. Stir in the corn kernels and lime juice. Season with salt and pepper. Stuff half of the bread slices with spinach then spread the avocado cream over them. Remove the shrimp tails and arrange them on the toast.
